Hearty High Protein Jambalaya!

Ingredients
1 medium onion chopped2 large stalks celery chopped2 green bell peppers chopped1/2 cup white rice - dry1.5 cups chicken broth2 Tb creole or Old Bay Seasoning28 can whole tomatoes2 large chicken breasts cooked and chopped1 package smoked turkey sausage chopped10 oz of shrimp.*optional add some ceyenne pepper to taste to make it more spicy - about 1/2 tsp
Directions
Saute chopped onion, green pepper and celery in pan with cooking spray. Cook about 5 min,

Add dry rice, chicken broth, tomatoes and spices. Stir and break up the larger tomato pieces.

Add the chicken and sausage and cook on stove until rice is almost done and the juices are absorbed.

When it is absorbed add the shrimp and mix through until heated. So good!! I like to eat mine with Frank's Red Hot Sauce for added kick!
