Southwest Beef Veggie Stew

Ingredients
2 lbs Beef (stew meat), cubed4 md Carrots, sliced2 lg Potatoes, cubed1 lg Onion, diced1.5 C Green Beans, french style, frozen1 C Green Peas, frozen (i add these in the last 1/2 hour so they stay nice and green)2 Cloves Garlic, coarsley chopped1 C White Beans, drained and rinsed1 5oz Can Green Chili Peppers, diced1 28oz can Diced Tomatoes1 Can Campbell's Cream of Chicken Soup2 C Vegetable broth (can use beef or chicken)3 T Cilantro, chopped
Directions
Mix everything together in a crock pot. Stir well. Cook in crock pot on high 5-6 hours or on low for 10-11 hours. Enjoy!

* Can substitute chicken for the beef and it comes out just as good.
