Healthy Deviled Eggs or Egg Salad

Ingredients
12 hard boiled eggs1/4 C nonfat plain Greek yogurt2 tsp dijon mustard1/4 tsp pepper1/8 tsp saltpaprika to garnish if desired
Directions
Prepare hard boiled eggs, cool, and peel. Depending on end use either slice whole egg of half so yolks can be prepared.

Mash eggs (or yolks) and mix with all ingredients except Paprika. Garnish if desired with the remaining paprika.

Makes 8 servings (1.5 egg per sandwich or deviled)

    I made these for Easter instead of using a mayo recipe. The deviled eggs turned out very bitter and not very tasty. Needless to say, they are not a big hit and are very mediocre at best. I would recommend spoiling yourself with a mayo recipe instead. - 4/23/11
