1 lb spinach.5 lb sliced mushrooms2 scallions, sliced.5 cup feta, crumbled1 Clementine - segments cut in thirds2 T dried cranberries2 T chopped walnutsDressing:1T orange juice1 tsp olive oil3T red wine vinegar1.5 tsp Dijon mustard
Directions
toss salad ingredients in bowl

whisk dressing ingredients together and toss with salad ingredients.

Serve with whole grain roll for a full meal.
