Garden Vegetable soup w/Potato

Ingredients
2/3 c sliced carrots1/2 c diced onion2 cloves minced garlic1 medium sized diced potato3 cups broth (beef, chicken or vegetable)1/2 c green beans1 tb tomato paste1/2 tsp dried basil1/4 tsp dried oregano1/4 tsp salt1/2 c diced zucchini
Directions
In large saucepan, sprayed with nonstick cooking spray, saute the carrot, onion and garlic over low heat until softened (about 5 minutes). Add broth, potato, beans, tomato paste, basil, oregano, and salt; bring to a boil. Lower heat and simmer, covered, about 15 minutes or until beans are tender.
Stir in zucchini and heat 3 - 4 minutes. Serve hot.
Make 4 servings (about 1 cup each)
