Cornish Game Hens with Garlic and Rosemary

Ingredients
4 Cornish game hens (giblets removed)1 lemon cut into 4 wedges4 sprigs of fresh rosemary3 tablespoons of olive oil24 cloves of garlic, peeled1/3 cup dry white wine1/3 cup low sodium chicken broth
Directions
Preheat oven to 450F
Pat hens dry and season cavities with salt and pepper.
Place 1 lemon wedge and 1 sprig of rosemary in the cavity of each hen.
Rub each hen with small amount of olive oil the season outside with salt and pepper.
Place hen in roasting pan and scatter garlic around them
Place in oven and roast for 25 minutes.
Reduce oven temperature to 350F and pour wine, broth and olive oil over hens
Roast until GBD (Golden Brown and Delicious) basting every 10 minutes with pan juices (20 to 25 minutes)
Transfer hens to platter and cover with foil to keep warm
Pour pan juices to saucepan and reduce (about 6 minutes)
Cut hens in half lengthwise, arrange on plates, spoon sauce and garlic around hens and serve.
