Crockpot Cuban Black Beans & Rice

Ingredients
1 lb dried black beans (2 cups, sorted and rinsed)1 lg onion, chopped (1 cup)1 lg bell pepper, chopped (1.5 cup)5 Cloves Garlic, finely chopped2 dried bay leaves1 can (14.5 oz) diced tomatoes, undrained5 cups of water2 T olive oil1.3 T ground cumin1 jalapeno chili, finely chopped1 t salt3 Cups hot cooked rice
Directions
1) In 3- to 4- quart slow cooker, mix all ingredients except rice.

2) Cover; cook on high setting 6-8 hrs

3) Remove bay leaves, Serve beans over rice.
