Tofu Quiche

1 T Olive Oil1 small onion, diced1 green bell Pepper, chopped1 c spinach, chapped1 ob firm tofu, patted dryPinch of grated nutmeg1/2 t turmeric1 T dried basil1/2 t saltpepper to taste1/2 c soy milk
Preheat oven to 425 degrees.
Heat olive oil in a saucepan over medium heat and saute onion, bell pepper, and spinach until lightly cooked.
In a blender or food processor, blend tofu, nutmeg, turmeric, basil, salt and soy milk until smooth. Stir veggies and tofu together. Add pepper to taste.
Pour batter into non-stick 9-inch pan. Bake for 30 minutes. Remove from oven and sprinkle cheese no top. Return to oven and bake for addition 15 minutes or until cheese is brown.
