Spanish Omlette

Directions
Makes 8 servings.
Slice the yams into thin circles and par-boil.
Chop up all the other veggies in matchstick size pieces (I use a mandolin). Saute in the oil until tender.
Drain the yams and line the bottom of a non-stick skillet. Place cooked veggies on top. Stir up the eggs with a fork, and pour over top. Bake in a 375 degree oven until puffed and cooked completely, about 15 minutes.
