Thai Coconut Chicken and Snow Peas

1 cup jasmine rice1 14-ounce can light coconut milk1 cup low fat chicken broth1 tablespoon cornstarch4 thin slices ginger2 cloves garlic, thinly sliced2 tablespoons zested lime1 pound boneless, skinless chicken breast, cut in 1/2" strips2 cups snow peas1 tablespoon fish sauce1/4 cup fresh cilantro, chopped
Prepare rice as directed on package.
In a large non-stick skillet, stir together coconut milk, broth, cornstarch, ginger and lime zest. Heat to boil over medium-high heat, stirring frequently. Boil 1 minute.
Add chicken and snow peas, cover and cook 4-5 minutes or until chicken is cooked throughout. Remove skillet from heat. Stir in fish sauce and cilantro.
Serve over rice.
