Kale, 6 cup, chopped I use "dino" or Ladino Kale Cooked Wild Rice, 4 cup Peppers, sweet, red, fresh, 2 cup, chopped Onions, raw, 4 slice, thin Olive Oil, .25 cup Tofu, firm, .5 block Sherry vinegar, 4 tablespoon Garlic, 3 cloves Pepper, red or cayenne, .5 tsp Salt, 1 tsp (remove)
In blender or food processor Tofu, Sherry Vinegar, Garlic, Cayenne and Salt whir and let sit to blend flavors.
Combine Kale, Wild Rice, Red Peppers and paper thin sliced Onion.
Dress and toss,
Keep Refrigerated... there's protein in there.
