Vegetarian Chili (Thisha)

Ingredients
2 Tbsp Canola Oil1 red bell pepper1 1/2 onions, chopped1 tsp minced garlic1 medium zucchini1 can corn1 1/2 cup mushrooms2 tbsp cumin2 tbsp chili powder1 1/4 tsp Sea Salt5 Roma Tomatoes2 cans Black Beans (low sodium ~ rinsed)1 Can Kidney Beans (low sodium ~ rinsed)1 Can Tomato Sauce (15 oz)1 Cup Vegetable Broth/Stock
Directions
Heat oil, add onions, bellpeppers, garlic, serrano peppers. Cook about 3 minutes. Add zucchini,corn,mushrooms cook 6 minutes till starts to brown around edges. Add chili powder, cumin, salt and cayenne. Add tomatoes and stir. Add beans, tomatoe sauce and water/veggie stock. Stir and bring to boil. Reduce heat to med low and simmer. stirring for about 20 minutes.
