1T light miracle whip1 T fresh lemon juice1 T grated Parmesan1/2 tsp Dijon mustardkosher salt and pepper to taste1/2 breast of roasted chicken breast sliced1/4 cups croutonsshaved Parmesan optional
Directions
Dressing- whisk together 1 T light miracle whip, 1 T fresh lemon juice, 1 T grated Parmesan, 1/2 tsp Dijon mustard, Salad-5 leaves romaine chopped, 1/2 breast of roasted chicken sliced, and 1/4 cup croutons, top with shaped Parmesan if desired. Refrigerate the salad and dressing separately for up to 6 hours in advance. Toss salad and dressing before eating
