Chicken Curry Stir Fry

Ingredients
1 lb chicken breast1 lg green bell pepper1 lg yellow onion2 crowns broccoliolive oilcurry powderwhite or brown rice (optional)
Directions
Set rice to cook if eating w rice NOTE: Calorie count does not include rice!

Chop chicken breast into small cubes, set aside
Chop onion, broccoli and green pepper into bite sized peices
staute chicken in olive oil and 1 tbsp of curry powder until cooked through
add vegetables, water (you may want to add another .25 cup or so if eating with rice, so it makes kind of a curry "sauce") , and 2 tbsp of curry powder. Stir fry with lid on pan until vegetables are steamed to your liking. (about 4-5 min)
Salt to taste
Serve alone or over rice--yum!
