Healthy Mashed Potatoes

Ingredients
One 3-lb bag of red skin potatoesOne 32 oz carton/can chicken broth6 tbls fat free sour cream6 tbls fat free creamOptionalchivessea saltfresh ground pepper
Directions
Step 1
Wash and chop potatoes leaving skins on for extra fiber.

Step 2
Place in pot with chicken broth (no water), add chives, or other chopped herbs and spices then boil potatoes until soft (test by piercing with fork).

Step 3
Drain potatoes (reserve broth) then add to mixing bowl with sour cream and cream cheese. Beat by hand or with electric mixer until desired consistency. If potatoes are too stiff add some of the reserved broth 1-2 teaspoons at a time while whipping until desired consistency is reached.


Season with sea salt and fresh ground pepper.


Any broth remaining may be used as gravy. The starch from the potatoes actually thickens it.

    I'm going to try this, but wanted to comment that on the ingredient list it says fat free cream, and the nutritional break down and directions say fat free cream cheese. I'm assuming it is cream cheese. - 11/14/10
