T's Fresh Farro Salad

Ingredients
1 1/2 cups Farro16 ounces Red Ripe Tomatoes1/2 cup Sweet Onions, raw, chopped1/4 cup Finely Chopped Parsley1/4 cup Lemon Juice (Fresh Squeezed)1/4 cup Olive Oil (don't need a full 1/4 cup can use half that)Salt and Pepper to taste
Directions
Cook 1 1/2 cups of Farro in 4 cups of water with 2 tsps of Kosher Salt.

Keep on medium to low for 10-20 minutes until tender.
Rinse thoroughly once cooked.

Chop tomatoes up small along with sweet onions and parsley.

Add all to a bowl.

Whisk together the olive oil, lemon juice salt and pepper.

Serve room temperature.
Makes about 8 1 cup servings
