Thai shrimp in coconut curry sauce with rice noodles

2 cups cooked Thai rice noodles1 cup sliced white onion1 red bell pepper, sliced into strips1.5 cups sliced mushrooms1/4 cup green onion cut into 1" long pieces2 cloves garlic crushed and minced1 tb minced fresh ginger1 tb thai red curry paste1 tb thai fish sauce1 14 oz can lite coconut milk1/4 cup lime juice3-4 inches of lemon grass, remove bottom inch and thinly slice 3-4 inches from remaining2 tb fesh basil leaves, torn1 tsp salt
Prepare all of the ingredients. Peel the shrimp and put all of the shells into a small pot with enough water to cover. Put a little of the lime peel in with it and gently boil.
Add 1 tb oil to a hot pan and cook shrimp until pink and set aside.
Heat a saute pan and add remaining olive oil and onion until it turns translucent (3 minutes). Add mushrooms, red bell pepper, and bok choy (3 minutes). Add in garlic and ginger for about 30 seconds. Add noodles, coconut milk, green onions, red curry paste, and lime juice and simmer for a few minutes. toss in the shrimp and basil and simmer for a few more minutes. Turn off heat and add fish sauce. Taste and add salt as needed.
