Southwest Chicken Soup

12 C Homemade Chicken Broth4 Chicken Breasts, (skin and bone removed), shredded1 Can of Black Beans, rinsed and drained1 Large Yam, diced1 Bag of Frozen Corn3 TB Chili Powder (or to taste)4 TB Cumin (or to taste)1 TB of ground coriander (I grind my own)2 TB olive oil
Make your stock or use low sodium stock in a box
In soup pot, add olive oil and saute onion and garlic until translucent. Add cumin, chili powder and coriander, cook to blend flavors. Add broth.
Add sweet potato diced.
When potatoes start to soften, add beans and corn and shredded chicken into pot.
Let cook until potatoes are soft.
