Nan's Jambalaya

Ingredients
2 Boneless, skinless chicken thighs1 c. chopped onions1 tsp. minced garlicdash or two red pepper (cayenne)1/4 diced jalapeno pepper1 pkg. kielbasa1 can diced tomatoes1 can black-eyed peas1 cup frozen corn1 cup rice, cooked
Directions
Spray skillet with Pam. Pan-fry chicken on med. heat with lid on until done, turning twice, transfer to plate and cut into bite-sized pieces. Return to pan--add onion and garlic, cook until onions are clear. Add peppers and kielbasa, place lid on and cook on low, stirring every now and then, until peppers are soft and sausage is hot. Add tomatoes, peas, corn, heat through. Add hot or cold rice, stirring well, heat through on low with lid on. Good with corn bread, greens.
