Spicy Chicken Stir-Fry Dinner

Ingredients
(Makes 2 servings)2 tsp peanut oil1/4 tsp red-pepper flakes2 thin-cut, boneless, skinless chicken breasts, cut into bite-size pieces or strips1/3 cup asparagus tips1/3 cup thinly sliced carrots1/4 medium onion, cut into bite-size pieces or strips1/3 cup frozen snow peas2 Tbsp sliced almonds2 tsp reduced-sodium soy sauce1/4 cup brown rice
Directions
1. Combine the peanut oil and red-pepper flakes in a medium-hot skillet.
2. Add the chicken and cook for 2 to 3 minutes, stirring frequently.
3. Add the remaining ingredients and cook for another 2 to 3 minutes, still stirring often. Serve over brown rice.
