Simple Potato Cheddar Soup

3 small potatoes cut up2 oz. cut up cheddar cheese1 cup nonfat milk2 tablespoons cornstarchsalt & pepper to taste
Boil potatoes in water to cover until tender. Add cheese and stir until melted. Mix cornstarch in milk and add to potatoes/cheese mixture. Heat to boiling and boil one minute. Take off heat and enjoy.
Makes approximately 3 one cup servings.
