Quinoa Arequipa Style

Ingredients
1/2 cup quinoa1/2 medium yellow onion 1 tsp chopped garlic1 tsp olive oil1 cup milk
Directions
Boil the quinoa in enough water without adding salt until it is cooked and free of liquid.
Stir fry onion and garlic in olive oil and season with salt. Add boiled quinoa to the onion garlic and mix well. Add milk and mix well. and let thicken. Add cheese until melted.
You can vary the recipe to your taste by using whole milk, and a cheese with a different flavor or texture.
