Quick and tasty chili

Ingredients
* Ground beef, lean, 16 oz * Diced Canned Tomatoes with green chilis, 1 can * Sweet Corn, Frozen, 1.5 cup * Tomato Paste, 1 can (6 oz) * Green Peppers (bell peppers), 1 large, chopped * Onions, raw, half a medium yellow or red onion * Frozen diced potatoes 1.5 cup diced (Usually listed on package as "Southern style hashbrowns, but they are not yet cooked so there is no added fat or salt. * Kale, 2 cup, chopped (remove) * Chili powder, 1 tbsp (remove) * *Cumin seed, 1 tsp (remove) * Tabasco Sauce, 3 tsp (remove)
Directions
1) Cook beef in skillet over medium heat, stirring often, until browned. Drain and rinse.
2) Add onions, potatoes, and peppers and 2 Tablespoon water. Cook 2-3 minutes or until just starting to soften.
3) Add tomatoes, corn, tomato paste, and spices. Simmer 10 minutes.
4) Add kale and tabasco. Simmer 5 minutes.

Serve as is or top with chopped green onions, sour cream (low fat, fat free, or plain yogurt), or 2 T shredded cheese.
