Ingredients
3 medium size sweet potates - Cubed1/2 cauliflower head - Flanns20 small cubes of pumpknExtra virgin Olive OilLow fat cottage cheese210grams can of Pink salmom - Fresh is alson great1 or 2 lemonsPink of salt and pepper.
Directions
This recipes serves three.
When serving it is good to keep vegie types together and in the centre of the plate.
The cottage cheese dollups can be placed centrally or wherever you wish.
The salmon is placed on sides and loosened to make it look like more.
Lemon slices can be place anywhere on the serving.
I have also used tomatoes, lettuce cucumber to garnish the serve. (optional)
