Marinated Mushrooms

Ingredients
1 pt. whole small white button muchroom caps, washed1/3 cup extra-virgin olive oil3 T. tarragon vinegar1/4 cup finely chopped parsley1 T. Dijon Mustard2 cloves garlic, chopped1 tsp. sugar3/4 tsp. dried tarragon1/2 tsp. salt1/2 tsp. pepperProcess all ingredients in food processor, except mushrooms. Put mushrooms in air-tight container and pour dressing over. Store in refrigerator up to 1 week.
