Slow Cooker Vegetable Minestrone

Ingredients
4 cups water4 tsp Better than Bouillon Vegetable Base4 cups no salt added tomato juice1 1/2 cups chopped carrots1 1/2 cups chopped celery1 cup chopped onion1 cup chopped zucchini3 garlic cloves, minced1 can (14.5oz) no salt added diced tomatoes1 can (14.5oz) no salt added diced tomatoes w/ basil, garlic & oregano1 tbsp dried basil1/2 tsp dried oregano1 tsp salt1/4 tsp black pepper1 1/2 cup (4.5 oz) multigrain rotini, uncooked
Directions
1. Combine all ingredients, except pasta, in a 4-5 quart crock pot.
2. Cook on low 7-8 hours or until vegetables are cooked.
3. Stir in pasta and cook on high for 15-20 minutes or until pasta is cooked. Top servings with parmesan cheese, if desired.
