Stuffed Pepper Stew

Ingredients
2 lbs extra lean ground beef (5-7% fat)2 cups onion (one large)1 tsp dried basil1 tsp dried oregano2 cloves garlic minced ( I use more)28 oz canned diced tomatoes4 cups chopped green peppers (4 peppers)30 oz canned tomato sauce6 cups beef broth2 cups vegetable juice (I use Spicy V-8)2 cups uncooked brown rice
Directions
Brown ground beef with onions and drain. Place in 7 qt slow cooker and combine with remaining ingredients. Cook on low for 6-8 hours. Or place in 8 pt soup pot and simmer for 1-2 hours. 1 cup per serving.
