Vegan Cabbage Casserole

Ingredients
4 cups cabbage, chopped/shredded1/2 cup onion, diced3 clove garlic, minced28 oz can diced tomatoes4 cups brown rice, cooked2 tbsp earth balance vegan margarine1/2 cup daiya vegan cheese1/2 cup bread crumbs
Directions
Ahead of time, cook brown rice to make 4 cups cooked rice.

In a little splash of oil, saute cabbage, onions, and garlic until onions are translucent. Once translucent, pour in the can of diced tomatoes. Season with salt and pepper to taste. Allow to simmer until flavors are well combined.

Preheat oven to 375 degrees. In a deep baking dish, lightly oil/spray the bottom of the dish and then spread half of the brown rice mixture into the bottom. Over the rice, spread half the cabbage mixture and then repeat.

In a small dish, heat the margarine until it's liquid (usually about 10 or so seconds in microwave). Mix this with the bread crumbs and the cheese until thoroughly combined. Pour this over the cabbage mixture, which should be the top of the deep baking dish. Place dish into oven for 45 minutes. Allow to cool slightly before serving. Enjoy!

    This came out pretty good. I added oregano and basil and Morningstar veggie sausage patties chopped up. I think next time I won't add so much Italian seasoning - I think a sprinkle and a sprinkle of veggie cheese would be enough. - 6/10/15
