French Onion Soup(with or w/o bread & cheese)

6 med. Vidalia onions thinly sliced.3 garlic cloves.2 Tbs.olive oil.6 C.low fat, low sodium chicken broth1 tsp oregano1 tsp tarragon1 tsp herbs de provance1 tsp hungarian hot paprika1/4 tsp crushed red pepper flakes1/4 tsp peppercorns crushed.
makes 6 servings.
Add the oil 1 tbsp at a time to frying pan ,saute onion and spices in batches (med./Hi heat) until browned.add oil as needed.
heat up the chicken broth, add the onions and crushed garlic, whisk out fryingpan with 1 cup of the broth ,pour into soup.
cook soup until done ,apx 30 min. longer cook-time makes more flavorful soup add spices as needed.
serve.
Now the french part:put the soup in individual oven proof soup bowls,
add 1 slice of french bread to each bowl, grate cheese over bread,to cover ,and bake in oven until cheese is melted.
