Low Cal Chicken, Beans, and Rice

Ingredients
I am making this meal for one, so you might have to multiply the ingredients to make it for more than that, though to be honest, the yield on just this could probably feed two...1 cup of Uncle's Ben's Long Grain White Rice (Cooked)1 (3 oz.) Boneless/Skinless Chicken Thigh Cutlet, chopped1/2 cup of Goya Black Eyed Peas2 tablespoons of freshly chopped cilantro4 tablespoons of fresh salsaSalt and Pepper to Taste, I go a little heavy on both, personallyThe fresh salsa I buy from the grocery store (Tops), but the ingredients are simply chopped vegetables, and are listed like this (if you don't have a Tops around) : Tomato, Cucumber, Green Pepper, Red Pepper, Red Onion, Cilantro, Lime Juice, Tomato Juice, Garlic, Poblano Pepper, Serrano Pepper, Salt.
Directions
Cook Rice according to the directions while also warming up the black eyed peas. Remove any more existing fat from the chicken thigh cutlet, and pan sear with a lid (turning the thighs over once about 1/2 way through the cook time) on medium to low heat for aprox. 15 minutes. Chop the cilantro (you could probably use dry cilantro, but in my experience dried cilantro falls way short in taste department compared to the fresh stuff). When the chicken is done cooking, cut into smaller bite size pieces.

Combine 1 cup of Cooked Rice, 1/2 cup of warmed black eyed peas, 1 cooked and chopped boneless/skinless chicken thigh, 2 tablespoons of freshly chopped cilantro, and 4 tablespoons of the fresh cilantro, mix and enjoy...

You can also try adding lime or lemon zest, and/or lime or lemon juice...
