Stuffed Tomatoes

Ingredients
Ingredients:Red Ripe Tomatoes, 4 large whole (3" dia) Baby Courgette, 1 serving Green Peppers (Any colour bell peppers), 0.5 cup, chopped Button Mushrooms, fresh, 0.5 cup, pieces or slices Red Onions, raw, 1 small
Directions
Take tomatoes cut the tops off them, set aside for later. Scrape the pulp out of inside, leaving a firm shell.
Roughly chop pulp and set aside.
Chop finely the other ingredients
Add to fry pan with TSP of olive oil.
At this time add your pulp.
Cook on a low heat until the juices have absorbed.
Scoop mixture into shells add top and bake for 20-30mins

You may add a sprinkle of parmesan or mozzarella cheese if desired.
