Sweet & Sour Lemon Chicken Lo-Mein

Ingredients
4 Tablespoons Thai Chili Sauce4 Tablespoons fresh squeezed Lemon Juice3 ounces Chicken Breast, bonless, skinless, cubed1/2 cup brocolli florets1 carrot sliced3 Tablespoons Chicken Broth1 cup Fettucini Noodles, cooked2 scallions thinly sliced
Directions
Sauce: Combine Chili Sauce, and Lemon Juice in a small microwavable container. Heat 2 minutes and stir to combine. Set Aside.

Stir Fry Chicken in 1/2 tablespoon olive oil until pink is no longer showing. Add brocolli, and carrot and toss to combine with chicken. Add 3 tablespoons chicken broth and cover pan allowing meat and vegetable to steam on med-low heat for aprox. 3 minutes. Stir 2-3 times to ensure that vegtables are not burning.

Add cooked fettucini to meat-vegtable mixture, combine well. Toss with chili sauce, and sprinkle w/ scallions.
