1-Box Betty Crocker Super Moist Carrot Cake Mix1 Can 100% Pure Pumpkin1/4 C Unsweetened Applesauce1/4 C water
Directions
Mix all ingredients. Bake in 400F for about 10 minutes for muffins. About 18 minutes for cake pan.

    This recipe marrys two of my favorite desserts (carrot cake with pumpkin pie). Applesauce replacing the oil makes it a sure winner. By using a mini muffin pan, I have portion control. - 1/25/11
