South Beach Friendly Peanut Butter Cookies

Ingredients
Directions
1 Cup Kroger Natural Peanut Butter1 Cup Splenda Blend for Baking1 Large Egg
Mix all ingredients.
Roll into 24 balls.
Place on ungreased cookie sheet and flatten with fork.
Bake at 350 degrees for about 18 minutes. (I recommend 13-15 min.) Remove to a wire rack to cool.
Yield - 2 dozen.

I have been making this recipe all my life with one addition...a tsp of vanilla extract. Also, this is the first time I have used splenda instead of sugar because of SBD. They taste very good, but the splenda will make you crave carbs/sweets, so beware of that when you're on phase 1. - 5/1/12

It definitely has that "artificial sweetener" aftertaste to it, but when you are doing the low carb thing... and just have to have something sweet, this is AWESOME!! I don't have a problem with that taste, but if you don't like that...you probably won't like these.
