Brown rice with feta cheese

1 box Uncle Ben's instant brown rice2 cups low sodium chicken broth2 garlic cloves1 cup scallions (I use green onions)1/3 cup slivered raw almonds1/3 cups rough copped feta cheese1/2 cup fresh parsley chopped1 tbsp extra virgin olive oil
makes 9 2/3 cup servings
1.preheat oven to 350. spread slivered almonds on baking sheet and bake for approx 5 minutes until they are browned (careful, they burn easily)
2. Prepare rice according to box except use chicken broth instead of water, do not add margarine, oil or salt to the rice as the box says. Add crushed garlic cloves to the water while cooking the rice. (only slightly crush garlic to keep it whole. You still get the flavor and it is easy to remove when the rice is done cooking)
3. Once rice is done cooking and drained if needed, remove the garlic cloves. Place in a large bowl, add almonds, scallions, parsley, feta cheese and olive oil. Mix well.
4. serve warm....Enjoy!
