3 lb stew meat1 cup chopped onion.5 cup flour3 cups beef broth, 98% fat free28 oz can whole tomatoes2 tbsp parsley1 tsp dried thyme2 tsp salt1 tsp pepper, black6 stalks celery6 carrots, chopped6 potatoes, diced
Makes 20 1-cup servings
Stir the flour into the beef. Saute the beef and onion in a non-stick skillet until thoroughly brown. Place in a stock pot. Add the broth, tomatoes and seasonings. Cover and simmer for 2.5 hours. Add the celery, carrot and potatoes. Cover and continue simmering for another 1.5 hours.
