Ingredients
4oz (or one cup) of chopped up ham2 Large eggs1/2 Cup chopped green bell peppers1/4 Cup chopped onions1 Teaspoon extra virgin olive oil1 Tablespoon minced garlic2 Tablespoons Salsa
Directions
Make sure you prep everything before you start cooking. Cut up and measure out your onions, your green peppers, and your ham. Scramble two eggs (I add a dash of salt and pepper), and place them on the side. Measure out your olive oil, and your garlic and add them to the pan first. Then add your ham, onions, and green peppers. Saute the mix for a few minutes or until lightly browned, then add the eggs. Cook until eggs are cooked through, put on a plate and top with some of your favorite salsa!! It's a delicious way to start your morning and takes about a total of ten minutes. It is a large portion, so if you split it between breakfast and lunch it is understandable. I prefer to have an extra yummy big breakfast.

sounds like a good meal for anytime, but best for breakfast to get you moving in the morning. I think I will give it a try soon. - 1/27/11
