Homefried Potatoes

Ingredients
5 Medium Sized Red Potatoes1 Sweet Onion 1 tbsp Salt3 tbsp Olive Oil1/2 Stick of Unsalted Butter (use less salt if using salted butter1/2 tbsp Pepper1 tsp Chopped Garlic
Directions
Bring a large pot of water to a boil
Peel all potatoes and cut into several thin pieces (~1x2 inches)
Add potatoes to boiling water, boil until slightly soft (~8 minutes)
Heat butter and oil in deep frying pan on medium heat
Slice onion into medium sized pieces (~1/4x1 inch)
Add onion to fry pan to soften in butter/oil
Drain potatoes and add to fry pan
Cover and cook for 20 minutes stirring occaisonally
Enjoy!
