Sweet Potato Casserole

Ingredients
2 lb sweet potatoes, peeled and cut into 2-in pieces3 medium carrots, peeled and cut into 2-in pieces1/4 cup packed brown sugar splenda2 tbsp butter (light margarine ok)2 tsp ground giner1/2 tsp grated orange peel1/2 tsp ground cinnamon2 egg whites1/3 cup chopped pecans
Directions
Preheat oven to 350. Lightly coat 2 qt baking dish with cooking spray. Put sweet potatoes in a large pot and cover with water by 2 inches. Bring to a bhoil. Add the carrots. Cook until both are tender (about 15 min) and drain well. Transfer the potatoes and carrots to a large bowl and add the sugar, butter, ginger, peel, and cinnamon. Mash until well combined and slightly chunky. Season with salt and pepper. Stir in the egg whites and transfer to baking dish. Sprinkle with nuts and bake until well puffed and hot through (about 30 minutes).
