Ingredients
2.5 cups Asparagus, chopped6 cups Chicken Broth1 medium onion, chopped3/4 Tbsp Olive Oil1 small white potato, chopped2 Tbsp Garlic, chopped
Directions
Saute onion and garlic in olive oil. Add to stock pot with the rest of the ingredients. Cook until tender and puree with a hand blender. Add salt if desired. Serve.

    I thought this was a bit bland, even after adding salt and pepper. Perhaps I should have added dry mustard as LarenK suggested. - 4/4/11

    only used 1/2 tsp garlic chopped and added 1/2 tsp dry mustard. Per the book no olive oil used, instead we sauteed in 1/4 cup of the chicken broth - 3/29/11
