Wild Rice with Apples and Butternut Squash

1 1/2 C Wild Rice1/2 C Fresh Parsley (chopped)1 Medium Onion3 C Butternut Squash (cubed in 1/2 inch)2 Granny Smith apples (cubed in 1/2 inch)1 Tbsp Thyme (dried)1 C Vegetable Broth1/2 C Slivered Almonds4 -5 Grilled Chicken Breasts (optional)
1. Cook wild rice (according to instructions)
2. Heat olive oil in large skillet
3. Saute onions until transluscent
4. Add squash, apples and thyme. Saute 5 minutes.
5. Stir in vegetable broth.
6. Combine cooked rice, parsley, and saute'd mixture into a 9" x 13" baking dish.
7. Sprinkle slivered almonds on top.
8. Bake at 450 degrees for 20 - 25 minutes.
Serves 10
Optional: Serve with grilled chicken
