Sweat the meat and roughly chopped onions in the oil on a low heat for 10 min. with the lid on. Add the tomato paste. Add as little hot water as possible to barely cover the meat.
(this draws the juice out of the meat. if you do not add any water it is better for as it cooks it creates its own water)
Add salt and pepper, marjoram, paprika and cumin.
Cook covered for 35 min.
Add the chopped vegetables, and cook for a further 1 hour.
Best served next day.
