Shrimp Casserole

Ingredients
1 Bellpepper1 Onion4 tsp. Garlic1 -Cream of Mushroom Soup FF1 can Rotel tomatoesLemon Juice from 1 lemon1 cup Weight Watchers 3 Cheese Mix5 cups white rice (cooked)1 small can mushrooms1 lb deveined shrimp3 tbs. Brummel and Brown Margarine
Directions
Devein shrimp and set aside. Chop bellpepper (I use green), onion, and garlic. Saute in Brummel and Brown Margarine. Add Can of tomatoes, shrimp, mushrooms, and juice from one lemon. Cook until shrimp are pink. remove from heat Spray bottom of 9 x 13 pan with Pam spray. Pour 4 cups of rice in pan and pour shrimp mixture over rice and mix well. Bake at 350 for 30 minutes, remove from oven and top with cheese, then bake 5 more minutes to melt cheese. Enjoy.
