Gluten-free Pasta Primavera

Ingredients
1 pkg. gluten free rice pasta1/2 cup butter or soy-free margarine1/2 cup olive oil1-3 cloves garlic, minced (to taste)1 16-oz. Pkg. Frozen mixed vegetables
Directions
Cook pasta al-dente. Drain. In cooking pot melt butter or margarine, add olive oil & garlic, cooking garlic, being careful not to burn the garlic. When garlic just starts to brown, add vegetables, toss with garlic & oil to cover all vegetables & cover pot, reducing heat to simmer. Allow vegetables to just reach tender-crisp, about 5-7 minutes. Add pasta, toss gently until all pasta is also covered with oil/butter mixture. If not lactose intolerant, serve with Parmesan cheese.

Makes 2 to 3 main dish servings or 6 side dish servings
