Chicken Chili

Ingredients
1.5 lbs boneless, skinless chicken cut into 1 inch pieces2 cans chopped tomatoes1 large onion, chopped5 cloves of garlic, chopped2 cans of kidney beans, drained and rinsed1 bay leaf 1 tablespoon cumin seeds1 tablespoon olive oil2 teaspoons chili powder1 teaspoon oregano1 7 oz can of fire roasted, diced green chilis2 1/2 cups vegetable brothsalt and pepper to taste
Directions
Cook the chicken and set aside.
Heat the oil in a large stock pot over med and add cumin seeds. Cook until fragrant. About a minute.
Add onions and garlic and cook until golden-about 10-15 min.
Add chili powder, oregano and bay leaf. mix into onion mixture well.
Add tomatoes with their juice and green chilis and bring to a simmer.
Stir in broth, beans and salt and pepper.
Bring to a simmer and reduce heat to medium low and cook, uncovered for 45 minutes. It should thicken somewhat by then.
Add the chicken and simmer another 15 minutes.
