Shrimp Salad Croissant Sandwiches

Ingredients
1 3/4 lbs shrimp1/2 cup celery1/2 cup diced red bell pepper3/4 cup low fat sour cream1/4 cup low fat mayonnaise1/4 cup diced red onion3 tablespoons minced fresh parsley1 1/2 tablespoons fresh lemon juice1 teaspoon Dijon mustardsalt & freshly ground black pepper, to taste6 croissants, split, buttered and lightly toasted
Directions
1 Combine shrimp, celery and bell pepper in large bowl.
2 Combine sour cream and next 5 ingredients in small bowl; season to taste with salt and pepper.
3 Add sour cream mixture to shrimp and mix well.
4 Cover and refrigerate.
5 Fill croissants just before serving.
