Moroccan Chicken

3 Tbsp Olive oil (opt. Butter)1&1/2 lbs.(24 oz.) boneless, skinless chix breast, cubed1 c. onion, chopped1 c. carrot, chopped1 c. mushroom halves1 c. celery, diced1/2 c. walnuts, chopped1/2 tsp salt 2 Tbsp curry powder1/2 tsp Cayenne pepper1&1/2 c. cooked garbanzo beans (15 oz. can)1&1/2 c. tomato sauce1 mini box of raisins1/2 cup Sun maid dried prunes, halved1c. water1/2 c. white wine (optional)
In a large saucepan saute in olive oil (or butter) the cubed chicken, onions, carrots, mushrooms, celery, walnuts. Stir in the salt, curry powder, and cayenne pepper.
Bring to a simmer, then add garbanzo beans, tomato sauce, raisins, dried prunes, water, and wine.
Cover and bring to a boil. Simmer on med heat for 40 minutes.
Best when served with Couscous.
