homemade granola, gluten free

Ingredients
6 cups oats, Bob's Red Mill Gluten Free oats6 cups water1/2 cup lemon juice, plain yogurt, or homemade whey1 cup coconut oil1/2 cup honey1 tsp salt1 cup chopped nuts2/3 cup dried fruit
Directions
soak oats in water with lemon juice (or yogurt/whey) overnight. Strain, then spread out on 2 cookie sheets. Put in an 170 degree F oven for 2-4 hours until oats are dehydrated (dry when crumbled). In a separate bowl, heat coconut oil until melted, then add the honey and salt. Stir, then add in the dehydrated oats and the rest of the ingredients. Spread back on the cookie sheets and dehydrate again at 170 degrees F for another 4-6 hours. Takes some preplanning but it's a big batch that lasts for months and it's worth it! makes 15 servings.
