Low Fat/Low Calorie Triple B (Banana, Blueberry, Bran) Muffins

1/4 cup canola Oil1/4 cup boiling water3/4 cup unpacked brown sugar1 cup Fiberone Cereal1 cup Fiberone Honey Clusters1 tsp. salt1 cup buttermilk1 egg1 1/4 tsp. baking soda1 3/4 cup whole wheat pastry flour1 medium banana (mashed)1 cup Blueberries (fresh or frozen)1 carton Greek yogurt with honey
Mix oil and boiling water together; let cool. Add remaining liquid ingredients to the oil and boiling water. In a separate bowl mix all dry ingredients. Slowly stir the dry ingredients into the wet ingredients. Mix well. Gently stir in blueberries. Bake at 400 degrees for 15 - 20 minutes. Makes 24 cupcakes.
