Garbanzo beans (2cans drained) (save liquid)Liquid from Garbanzo beans (1 cup)Garlic (3 cloves)Olive Oil (1/4 cup)Peanut Butter (4 TBS)Lemon Juice (2 TBS)Lemon Zest (of 1 lemon)Salt (to taste, approximately 1 tsp)Pepper (to taste)Parsley (1 TBS)
Place garbanzo beans, garlic, 1 cup of reserved liquid, peanut butter, lemon juice, lemon zest, salt, pepper, and parsley in Food processor and blend until creamy and smooth. Stream in olive oil at the very end while food processor is running. Serve with veggies, pita chips, on sandwiches, pita bread, or almost anything. Refrigerate leftovers.
